Easy Chicken Lettuce Wraps

There’s just something about eating out of a lettuce cup that’s kinda fun and it feels like you’re eating healthy. And hey, these do have a lot of protein from the ground chicken. In fact, my husband and I made an entire meal out of these chicken lettuce wraps.

If you’ve ever been to PF Chang you’ve probably had their famous chicken lettuce wraps, now I’m going to say these are exactly the same but they are pretty darn close (maybe even better, lol)! The other thing I like about these is how fast they cook up and it’s basically a one-pan meal making clean up a breeze!

Ingredients

Chicken Lettuce Wraps

  • 1 pound ground chicken or turkey
  • 2 cloves garlic – minced
  • 1 onion – diced
  • 1/4 cup hoisin sauce
  • 3 tablespoons soy sauce
  • 1 tablespoon rice wine vinegar
  • 1/2 tablespoon freshly grated ginger
  • 1 tablespoon garlic chili sauce
  • 1 (8-ounce) can whole or sliced water chestnuts – drained and diced small
  • 2 green onions, thinly sliced
  • salt and pepper
  • 1 head butter lettuce or romaine

Special Sauce

  • 3 tablespoons soy sauce
  • 1 tablespoon rice wine vinegar
  • 2 tablespoons chili garlic sauce
  • 2 tablespoons sugar
  • 1 tablespoon ketchup
  • 1/4 cup water
  • juice from 1/2 lemon
  • 1 tsp sesame oil

Instructions

Chicken Lettuce Wraps

  1. Heat olive oil in a deep saucepan over medium-high heat. Add ground chicken, crumble and cook until browned, drain excess fat, if any – I had none.
  2. Stir in garlic, onion, hoisin sauce, soy sauce, rice wine vinegar, ginger and chili garlic sauce until onions have become translucent, about 1-2 minutes.
  3. Lastly, stir in chestnuts and green onions, cook on low, about 2-3 minutes; season with salt and pepper, to taste. Note – you may not need additional salt as the soy sauce is salty.
  4. To serve, spoon several tablespoons of the mixture into the center of a lettuce leaf or place in a bowl and allow people to make their own.

Special Sauce

  1. In a small bowl whisk all in ingredients together cove with plastic wrap and place in the refrigerator. Just before serving whisk again to make sure everything is well combined.
