This side dish literally came together in about 10 minutes. Couscous takes only 5 minutes to cook so in the amount of time it takes you to chop 3 vegetables you have a light and delicious pasta salad.
What is couscous? It’s commonly thought of as a grain but it’s actually a pasta made from semolina wheat, it contains good protein and fiber and very little fat.
Couscous is so versatile, add in any veggies you like or maybe some walnuts or pine nuts for a little extra crunch. This side salad also batches well, which means you can easily make a big portion to take to a party or a picnic. Couscous salad also pairs well with any protein. For this dinner, I made a simple tilapia, sprinkled with my favorite seasonings (capers, paprika, garlic and onion powder, salt, and pepper) then roasted at 400F for about 6 minutes.
Couscous Salad with Cucumber, Tomatoes and Red Onion

Ingredients
- 1 cup uncooked couscous
- 1/2 English cucumber – seeded and diced
- 1/2 cup cherry tomatoes – cut in half
- 1 tablespoon red onion – sliced very thin
- 1/4 cup feta cheese
- 1/4 cup red wine vinegar
- 1/4 cup olive oil – good quality
- 1/4 teaspoon each of salt and pepper (+/- to your taste)
- juice from 1/2 a lemon
Instructions

Prepare couscous to package directions.

In a small bowl add the red wine vinegar, then whisk in the olive oil, salt, pepper and lemon juice.

While the couscous is warm stir in the tomatoes, cucumber, and red onion. Stir to combine then add in the vinegar mixture.

Sprinkle with cheese and serve with extra lemon if desired.
