Blue Cheese Stuffed Bacon Wrapped Dates

Pots and Pans: Not many.
I made these yummy bites as an appetizer for Easter Brunch. It was a last minute decision but they came together very quickly without much effort (and w/o messing up my kitchen) at all.

 

Stuff You’ll need: 

1 lb dates, pitted / Found in the produce section, usually with the pre-cut fruit
4 oz blue cheese
1 lb thin sliced bacon, cut in half
Toothpicks (optional)

How to make these yummy bites:

Preheat the oven to 375 degrees F

Using a paring knife, slice open the top half of the dates and open them up. Break off pieces of blue cheese, and stuff it into the center of the dates. Close the dates, and wrap a half-slice of bacon around the outside, place date on the baking sheet with the edge of bacon on the bottom. (Optional: Secure each one with a toothpick.) Arrange on a lipped baking sheet lined with foil (to avoid scrubbing later).

Bake for 30 to 40 minutes in the preheated oven, or until the bacon is crisp or cooked to your liking. Flip once half way thru if needed.
