
I love to make these cookies at Christmastime because it brings back some of my fondest memories of my mom and I baking up a storm in the kitchen. There’s no reason these can’t be enjoyed all year round, I mean chocolate and peanut butter are never out of season!

Stuff You’ll Need:
2 cups granulated sugar
1 stick of butter*
1/2 cup milk
3 Tbsp unsweetened cocoa powder
1/2 cup creamy peanut butter
1 teaspoon vanilla
4 cups quick cooking oats
Parchment or wax paper – place on counter b/f you start making the cookies
How to make these goodies:
Add the butter, sugar, milk, and cocoa powder in a deep saucepan.
Bring to a rolling boil, and boil for 1 minute. Mom always said to let it boil to the top of the pan then quickly remove it from the heat and quickly stir in the peanut butter.
As soon as the PB has melted add the vanilla, then add the oats, only add half at a time. Work quickly folding in the oats until everything is covered in chocolate.
Again working swiftly drop a spoonful onto parchment paper. They are rich so you don’t need to make them too big.
Let cool until set, about 10-15 minutes. Yields about 2 doz cookies.
*NOTE – do NOT use margarine or butter out of a tub. Use real butter in the stick form. If you use the soft stuff the cookies won’t harden up and you’ll never get them off the parchment paper. It’s not a complete waste but you’ll have to eat the cookies with a spoon 🙂
