St. Patrick’s Day Irish Juicy Lucy Burger

Ingredients

  • 1lb ground beef
  • 2 eggs – fried
  • 1 sweet onion – thinly sliced
  • 2 slices Dubliner Cheese – or your favorite Irish cheese
  • 4 slices of cooked bacon
  • 1/2 cup Jameson Scotch or any Irish whisky
  • 1 cup Guinness beer
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • salt/pepper to your taste
  • 2 sesame seed buns

Instructions

In a medium-sized bowl combine the ground beef, Guiness beer, onion and garlic powder, salt and pepper. Mix until well combined but don’t over mix.

Make the burger patties. Start by dividing the ground beef into 4 equal portions. Make 4 thin patties and place cheese in the center of two patties. Place the second patty on top of the cheese and pinch side to seal in the cheese. Reshape if necessary.

Make the toppings. Fry two eggs, I like a soft yolk but feel free to do a hard fry. Once cooked remove from pan and reserve to the side. In the same pan, add a little olive oil and sautee the onions with salt and pepper, after about 3 minutes add the Jameson and cook until reduced. Then you can either fry the bacon or pop it in the microwave covered with paper towels for 2-3 minutes.

Preheat outdoor grill or grill pan over medium or medium-high heat.

Cook the burgers to your liking. I like a little pink and that takes about 6 minutes on each side. To keep the burger from shrinking I palce a heavy skillet on top of the burger while it cooks.

Butter the buns and heat on the grill for a few minutes until you have a few grill marks.

Assemble the burgers.Β  Place onto the buns the burgers, sauteed onions, bacon and fried egg.
