- 1 pound of uncooked shrimp – shell off and deveined
- 1 large onion – chopped
- 1 red pepper – chopped
- 1 or 2 cloves garlic – chopped (+/- to your preference)
- 1 jalapeno – chopped (seeds removed for less heat)
- 2 tablespoons Gumbeaux Seasoning Blend *
- dash of paprika
- 1 ripe tomato – chopped
- 1/2 cup chicken (or seafood) stock
- 1 + 1/3 cup quick grits
- 1/4 cup milk or heavy cream
- 2 pats of butter
- 1 + 1/2 cups sharp cheddar cheese – shredded
- olive oil
- Heat olive oil in a deep skillet or pot over medium heat. Sautee onions, red pepper, garlic, and jalapeno, season with salt and pepper. Cook until tender, about 3-5 minutes.
- While the veggies are sauteing, make the grits. Follow directions on the side of the quick grits packaging for 4 servings. When grits have thickened add the butter, milk and gradually stir in the shredded cheese until everything has melted together.
- To the pot with the onions and pepper, add the shrimp, tomatoes, stock, gumbo seasonings, and paprika, stir well to combine. Increase heat to medium-high and continue to cook until shrimp are no longer opaque – about 3-5 minutes.
- To serve spoon grits into a bowl and top with shrimp, veggies and the juice.
*If you did not have the Gumbeaux Seasoning Blend you can use this Cajun Seasoning Mix: 1 Tbsp Old Bay, 1 teaspoon black pepper, 1/2 teaspoon cayenne pepper, 1 teaspoon celery seed, 2 Tbsp paprika, 1 Tbsp garlic powder, 1 Tbsp dried thyme, 1 Tbsp dried oregano and 1 Tbsp of dried basil
