Southern Shrimp and Grits

Ingredients

  • 1 pound of uncooked shrimp – shell off and deveined 
  • 1 large onion – chopped
  • 1 red pepper – chopped
  • 1 or 2 cloves garlic – chopped (+/- to your preference)
  • 1 jalapeno – chopped (seeds removed for less heat)
  • 2 tablespoons Gumbeaux Seasoning Blend *
  • dash of paprika
  • 1 ripe tomato – chopped
  • 1/2 cup chicken (or seafood) stock
  • 1 + 1/3 cup quick grits
  • 1/4 cup milk or heavy cream
  • 2 pats of butter
  • 1 + 1/2 cups sharp cheddar cheese – shredded
  • olive oil

Instructions

  1. Heat olive oil in a deep skillet or pot over medium heat. Sautee onions, red pepper, garlic, and jalapeno, season with salt and pepper. Cook until tender, about 3-5 minutes. 
  2. While the veggies are sauteing, make the grits. Follow directions on the side of the quick grits packaging for 4 servings.  When grits have thickened add the butter, milk and gradually stir in the shredded cheese until everything has melted together.
  3. To the pot with the onions and pepper, add the shrimp, tomatoes, stock, gumbo seasonings, and paprika, stir well to combine. Increase heat to medium-high and continue to cook until shrimp are no longer opaque – about 3-5 minutes. 
  4. To serve spoon grits into a bowl and top with shrimp, veggies and the juice.

Notes

*If you did not have the Gumbeaux Seasoning Blend  you can use this Cajun Seasoning Mix: 1 Tbsp Old Bay, 1 teaspoon black pepper, 1/2 teaspoon cayenne pepper, 1 teaspoon celery seed, 2 Tbsp paprika, 1 Tbsp garlic powder, 1 Tbsp dried thyme, 1 Tbsp dried oregano and 1 Tbsp of dried basil
