Ingredients
Aluminum foil – 1 large piece per-person
1 Packet Taco Seasoning
1 bag frozen French Fries (steak cut)
1 Rotisserie Chicken – meat removed and shredded and reserve juices
1 Cup Shredded Cheese – I like the 4-Cheese Mexican Style in a bag
1 Jar Salsa – your favorite brand and heat level
1/2 Cup Jalapenos – optional
1/2 Cup Bacon – cooked and diced
Sour cream – optional topping
Diced tomatoes – optional topping
Instructions
-
Begin by preheating your grill to 400F
-
Next, fold the foil into a tray shape with the edges folded up so that nothing can fall out.
-
Spray foil with non-stick spray and place frozen fries onto the foil. Place in the grill for about 10 minutes.
-
While the fries are cooking, shred the rotisserie chicken into a large bowl. Mix in the taco seasoning and a little bit of the drippings from the chicken. If drippings add about 1 tablespoon of water.
-
After the fries have cooked for 10 minutes, flip over and add the chicken and cheese on top of the fries. Close the lid and bake another 10 minutes.
-
Here’s where I like to set up the toppings in a self-serve bar style. After everyone has a tray of fries they can go through the line and add all the toppings they like.
