Healthy Cherry and Granola Parfait

Healthy Valentine’s Day Parfait Dessert

Ingredients

Scale
  • 16oz heavy whipping cream
  • 2 TBL sugar-free Jell-O (any flavor)

Granola

  • 3 tablespoons maple syrup
  • 1 teaspoon cinnamon
  • pinch sea salt
  • 2 tablespoons nut butter of your choice
  • 1 cup mixed nuts
  • 2 cups whole oats
  • 1/2 cup chopped dried cherries OR dried fruit of your choice

Extra’s

  • Lily’s chocolate chips
  • Redi Whip

Instructions

  • Pour the cold heavy cream in a bowl, using a mixer, mix until fluffy. Add in the jello powder and mix until well combined. Refrigerate until ready to use.
  • Preheat oven to 300F
  • In a large bowl combine the maple syrup, cinnamon, sea salt and nut butter, whisk to combine. Add in the mixed nuts. Toss to combine.
  • Pour out onto a parchment paper-lined, rimmed baking sheet. For clusters of granola, press together before baking.
  • Bake for about 15 min or until everything starts to brown just a little. Remove from the oven and stir in the dried cherries.
  • Allow granola to cool then layer your parfait in the cups.
  • I like to start with granola on the bottom then the whipped fluff, more granola, and fruit. Finish with more whipped fluff, whipped cream, chocolate chips and a cherry if you’d like.
