Cheddar Cheese Apple Cobbler

Ingredients

Filing:
1/2 cup packed brown sugar
1 TBL corn starch dissolved in a splash of cold water
1 tsp. cinnamon
4 large apples, peeled and diced small (I like Honeycrisp)
3/4 cup sharp cheddar diced into very small pieces

Dough Topping:
1 + 1/3 cups all-purpose flour
1/4 cup sugar
1 + 1/2 teaspoons baking powder
1/2 teaspoons salt
5 tablespoons chilled unsalted butter, cut into small pieces
1/2 cup chilled whole milk


Instructions

Pre Heat oven to 350F

Apple Cheese Filling:
1. Combine brown sugar, cinnamon and apples in a medium pot and cook until apples are slightly tender – about 5 minutes.

2. Bring to a boil and add dissolved cornstarch stir well, liquid should thicken. Remove from heat and stir in the cheese.

Dough:
1. Whisk flour, sugar, baking powder, and salt in a bowl. Add butter; using fingertips, smash and rub in the butter until a coarse meal forms. Add 1/2 cup milk, a little at a time, and stir until dough forms.

2. Divide the apple cheese filling among 4 greased cocotte’s (small baking dishes) or pour into 1 large greased baking dish.

3. You have 2 options here: you can pull apart the dough and crumble on top of the apples or you can roll out the dough enough to cover the baking dish. Your choice but I like the crumble, it’s quicker, less to clean up and I like the thick pieces in the cobbler. 

4. After you have the crust on the apples. Bake until fruit is bubbling and the dough is cooked through and golden brown, about 25 minutes. Let cool at least 15 minutes; serve with vanilla bean ice cream and caramel sauce if desired.
