Ingredients
Scale
- 1 cup flour
- 1/2 cup sugar
- 1 + 1/4 tsp baking powder
- Pinch of salt
- 1/2 tablespoon apple pie spice
- 1/3 cup ricotta cheese
- 1 egg
- splash of vanilla
Apple Filling:
- 1 apple – peeled and diced very small
- 1 cup sugar
- 1/2 tablespoon apple pie spice
Glaze:
- 1 quart Canola Oil – for deep frying
- 1 C confectioners sugar
- 2 TBL heavy cream or whole milk
- large splash of vanilla
- 1/4 tsp apple pie spice
Instructions
- Make the apple filling: In a pot add the diced apples, sugar, apple pie spice, and a splash of water. Simmer over low heat until apples are soft.
- Make the batter: in a small bowl combine dry ingredients – flour, sugar, apple pie spice, baking powder, and salt.
- In a medium bowl whisk together wet ingredients (ricotta, egg, and vanilla) then slowly mix in the dry ingredients.
- When apples are soft combine with the batter. Note – only add half to start with, if apples are well-distributed in the batter you may not need all of it, depending how big your apple is.
- In a deep heavy pot, bring oil to 325°
- Using a scoop or spoon gently place the dough into the hot oil. Allow to brown and flip over. Continue to cook and flip until golden brown. Place on a paper towel to drain.
- Glaze – Whisk all ingredients (confectioners sugar, whole milk, vanilla and apple pie spice) together and spoon over warm fritters.
- Best enjoyed immediately, while warm!
Notes
- If you don’t have, or can’t find, aple pie spice you can sub with a combination of cinnamon, nutmeg, and allspice
