You will be amazed at how fast these little bite-sized sandwiches fly off the table. It does not matter how many I make, I never end up with any leftovers. I personally love jalapeno and highly recommend you use pimento cheese with jalapeno. However, if your taste buds aren’t up to it, by all means, go with the plain (or there’s always bacon too).
Pots and Pans: NONE. All you need is a cutting board, a knife, and a small round pastry cutter (if you don’t have one, simply use a knife and cut squares/rectangles).
1 – 12oz container pimento cheese – This is my favorite brand Palmetto Brand And it’s easy to find in the south at Kroger, Costco and Sams Club.
1 Loaf of Wonder bread or a really soft bread of your choice. The soft bread is what makes these little guys melt in your mouth. *Note: the 12oz container of pimento cheese will make just enough for 1 loaf of bread.
- Start by cutting the bread into small, bite-sized circles. I use a round pastry cutter but if you don’t have one use a sharp knife and make squares or rectangles out of the bread.
- After you have all the bread cut into shapes, spread on a little (or a lot) of pimento cheese onto one piece of bread and top with the other side of bread.
- Repeat and that’s it, you’re finished!
Make-ahead the day before and store in an airtight Tupperware-type container and you’ll be all set.
