Asparagus and Tomato Farro Salad

Asparagus and Tomato Farro Salad

This is a great side dish for any season. Farro is readily available at most grocery stores and it’s basically a blank slate, allowing you to add in a multitude of veggies and cheeses regardless of the time of year and what’s in season. And it’s especially good for outdoor picnic’s because there’s no mayo to spoil in the heat.

Keto Friendly Zucchini Skins aka Zucchini Boats

Keto Friendly Zucchini Skins aka Zucchini Boats

Why eat potato when you can have Zucchini Skins!

I love it when my husband says ‘What are you making now?’ Then he proceeds to eat it all and ask me to make it again and finishes his thought by adding a ‘hua, that was actually really good.’😜

I’ve been working on a few healthy, Keto friendly recipes for an upcoming cooking class. I think these Zucchini Skins with cheese, bacon and sour cream will make the cut

Shrimp and Polenta with Slow Roasted Tomatoes and Spinach

Shrimp and Polenta with Slow Roasted Tomatoes and Spinach

Sometimes you just need a meal that sticks to ribs but not necessarily to your hips. Now I'm not going to say this recipe will help you lose weight but honestly, if you keep your portion of grits within reason it's really not too bad. So I felt this day needed a little celebrating, and what better way to celebrate the anniversary of a culinary adventure...make something I picked up while in France.

Caprese Salad

Obviously, there really isn't much to this recipe but I thought it was worth a post b/c I rarely see many Caprese salads made with anything except red tomatoes.

Cast Iron Skillet Pizza Chicken

Cast Iron Skillet Pizza Chicken

I LOVE a one-pot meal. The fewer dishes to wash, clean and put away all the better. You'll need a 12 inch skillet or a little larger, cutting board, knife and spoon....that's it!

Ann's Eggplant Parmesan

Ann's Eggplant Parmesan

My husbands Italian and loves eggplant, he grew up with his mom making eggplant parm all the time. So it was a dish I really wanted to learn to make, I was fortunate that she was able to teach me her recipe before she passed away in 2012. Cooking is so much more than just fueling our bodies, in our house it's time together having fun. Even if it doesn't turn out like the picture or taste quite right, it's all about the effort. Besides what's the worst case scenario....it's terrible and you order pizza? :)
