Random Toppings Pizza Night

Here's the thing about pizza...why make it at home when you can buy really good pizza at your local pizzeria?  Well, because sometimes it's FUN and/or you don't want to leave the house to pick it up.

HOMEMADE PIZZA

Mike and I enjoy making pizzas at home. It's a competition of sorts to see who can make the best one using random toppings we find in the fridge or pantry. I can make my own pizza crust but typically our pizza nights are last minute and I don't have time to wait on all that resting and rising. Actually, the truth is once I'm hungry there's a limited amount of time I have to eat before the 'hangry' sets in.  For the sake of this recipe, I used a Boboli Thin Crust. I keep a few in the freezer so I'm ready at a moments notice. You can also buy fresh dough at Publix and Kroger, it's usually located near the deli.

 

Ingredients:

1 Pre-made pizza crust - I like Boboli Thin Crust or fresh from Publix
1 Cup of sauce - I use whatever I have open, any type of red sauce or vodka sauce. 
1 1/2 Cups of mozzarella cheese - fresh mozz is a staple in my house but you can always use the shredded kind in the bag.
Random Toppings - start looking in your fridge or pantry!
Options: Onion, capers, black olives, green olives, sun-dried tomatoes, pepperoni, cherry tomatoes, bits of broccoli. My only recommendation is, don't get carried away. Too many toppings can be a bad thing.

How to make it:

Pre-heat oven to 425
If the crust is frozen, cut the bag open and place in the microwave for about 1 minute. Check and if it's not thawed flip it over and heat for another 30 sec.

*if you like a crispy crust. Place crust in preheated oven for about 5 or 6 min. Remove and start layering on the sauce and toppings.

Once thawed spoon red sauce on crust, trying not to get too close to the edge, leave about a half inch. 

Place cheese evenly around the crust. Add toppings as you like.

Place pizza in the oven on a middle rack. I don't put the pizza on anything but if you are worried your sauce might run over place pizza on a piece of aluminum foil or flat baking sheet.

Cook for 10 minutes then turn on the broiler to get the cheese all melty and toasted. Watch it closely thou, you don't want it to burn.

Remove from oven and let rest for 5 min b/f cutting...if not the cheese will run everywhere.
