Healthy Yet Yummy Blueberry Muffins

These really do taste great and take no time at all to make AND minimal dishes to wash, like 1 bowl and a measuring a cup, (the best type of recipe)!

The stuff you'll need:

  • 1.5 Cups Almond Flour

  • 2 eggs

  • 3/4 tsp baking soda

  • 1 tbsp of melted coconut oil (substitute olive oil if you don't have coconut on hand)

  • pinch of salt

  • 1.5 to 2 fairly ripe bananas, mashed up. I used the back of a fork

  • 1/2 cup blueberries (I added extra)

  • Optional: add nuts of your choice, or swap fruit with strawberries, peaches, fresh cherries, etc.

The How-To:

Preheat oven to 350
Mix flour, salt and baking soda
In a separate bowl, mix eggs and coconut oil
Add egg mixture to flour mixture and stir well
Stir in mashed bananas
Fold in blueberries

Divide into lined muffin pan - makes 9 servings

Bake for 25-30 min, test with toothpick
