Fig Tart

Sometimes I walk through the grocery store and buy completely random ingredients without reason or plan. Well, that was the case with these figs. Trader Joes gets me every time, they always have fresh, seasonal food that inspires me to get creative. So I proudly picked up the carton of figs and got to thinking. My 'recipe thinking' usually happens in the kitchen while opening and closing the fridge and pantry and looking around.

I always have puff pastry and cream cheese, somehow those items have become staples in my kitchen (along with sticks of butter) and I know those two things will go together. However, since this was a last minute creation I didn't really measure out all the ingredients, so taste as you go along and adjust to your liking.



Serving size 2 but you could cut the pastry into smaller pieces and serve 4.

  • 1 Sheet Frozen Puff Pastry – thawed and rolled out

  • Cream Cheese - 3/4 Cup

  • Powdered sugar – about 4 tablespoons plus some for garnish

  • 2 Tbsp Butter, melted

  • 4-6 Figs - washed and quartered

  • Sugar - about 2 tablespoons for sprinkleing

  • Honey – 4 tablespoons divided

How to make it:

Preheat the oven to 400 F and line a cookie sheet with parchment paper.

Roll out the Puff Pastry.

Cut into two squares (or any shape you like). Fold or pinch in the sides to create a little edge. Place pastry on the parchment paper on the cookie sheet.

Mix together the cream cheese, powdered sugar and 2 TBS honey until smooth.

Spread cream cheese mixture in the center of the pastry dough, brush melted butter around the edge and sprinkle with sugar.

Add the figs to the top and bake about 15 min or until edges are golden brown.

Cool for a couple minutes then drizzle with honey and a sprinkle of powdered sugar, garnish with mint if you have it.  Best served warm.
